The oak wood of the ageing casks behaves like a semi-permeable membrane, and during the ageing process a portion of the young eaux-de-vie evaporates each year -- "the angel's share." In damp cellars, the evaporation of the water portion of the eaux--de-vie is impeded, favouring the evaporation of alcohol, leading to a natural reduction of strength, giving an altogether smoother, mellower texture and flavour, which characterises the finest Cognacs.
