The fruity and spicy notes in our 15 Year Old make it th perfect accompaniemnt to a light fish dish, such as seared scallops with lemon butter, or served alongside a seductively sweet and sticky toffee pudding. We harness the influence of the salty sea winds which batter Orkney's rugged coastlines, the intensely floral character of our treeless but heather-rich peat and the finest sherry seasoned oak casks on our whisky as it matures, to create Highland Park's uniquely complex balance of smoky-sweet flavours.
