Cognac today is distilled almost exclusively from a single grape variety - Ugni Blanc - the grape that recovered from the 19th century phylloxera blight most readily. Before the blight many grape varieties were used, including the native Folle Blanche and Colombard. Pre-phylloxera cognacs are now exceedingly hard to fine, but the lucky few who have tasted them speak of their elegance, creamy texture, depth of flavor and the heightened fruit and floral notes.
